Zucchini Muffins

Ingredients

  • 1 1/2 C. Sugar (I always try to make the first listed ingredients a good one)
  • 3 Eggs
  • 1 C. Oil
  • 3 Tsp. Vanilla
  • 1 1/2 C. White Flour
  • 1 1/2 C. Whole Wheat Flour
  • 1 Tsp. Salt
  • 1/4 Tsp. Baking Powder
  • 1 Tsp. Baking Soda
  • 1/2 Tsp. Cinnamon
  • 1/2 Tsp. Ground Ginger
  • 1/2 Tsp. Nutmeg
  • 2 C. Shredded Zucchini
  • 1 C. Chopped Walnuts

Steps

  1. Combine in a large bowl: sugar, eggs, oil, and vanilla. Stir it all together.
  2. Now add the flours, salt, baking powder, cinnamon, baking soda, ginger, and nutmeg.
  3. Stir in zucchini and walnuts. Mix thoroughly.
  4. Line a muffin tin with muffin wrappers, and bring on the batter.
  5. Bake at 350 for 20 minutes.

Makes 12 Muffins - but this recipe is also good for bread too. Just adjust the baking times.
